Egg Bhurji Sandwiches (1.5 Sandwiches)
(makes 1.5 sandwiches)
pinch chili powder
handful coriander leaves
3 bread slices (use 2 bread slices to make one sandwich, cut the remaining slice in half and put the two halves together to make another sandwich)
Within daily oil quota, saute green chili, ginger, and onion until onion is soft. Add tomato, turmeric and chili powder and cook until moisture is reduced. Add beaten eggs and salt to taste, let the eggs cook.
Finish with coriander and spoon onto bread.
