Thai Soybean Stirfry with rice and vegetables


60 g rice
100 g vegetables

Ingredients for Thai Soybean Stirfry

40 g soy beans
1/8th cup chopped onions
1/4 tsp chopped garlic
1/4 tsp chopped green chillies
1 teaspoon tomato sauce
1/2 Tbsp coriander chopped
1/2 Tbsp soya sauce
1/2 tsp Thai red curry paste
1/8 cup bean sprouts
1 tablespoon crushed peanuts
Juice of 1/4th lemon
Spring onion
Coriander, chopped
Chilli flakes


Soak soya bean in water for 30 min Wash 3-4 times, drain well. In a wok, heat 1 teaspoon oil (within daily quota). Saute the onion, garlic and green chillis. Then, add soy beans and saute until dried out. Then add the tomato sauce, soy sauce, thai red curry paste. Add crushed black pepper and spring onions. Finish with crushed peanuts and chili flakes if desired. Top with lemon juice and salt before serving.
