You'll eat plenty of foods containing "carbs." Like roti, rice, dosa, paratha, ice-cream, chocolate, popcorn. Some people believe they need to cut out grains, carbs, desserts, etc. from their diet. If that works for you, that's fine. But this diet is full of normal foods.
But you do NOT need to be an expert chef. Everything home-cooked has detailed instructions and recipes. And we have plenty of "quick" options to whip up in a few minutes for the days you are short on time.
